NEW SMOKY BLUE FROM ROTH KASE

Two years in the making, Moody Blue
from Roth Käse USA is a new addition
to the company’s award-winning line
of original cheeses. This blue-veined
cheese enjoyed immediate success on
its launch, capturing 2nd place in the
Smoked Cheese category at the 2009
U.S. Championship Cheese contest. It is
made in small batches from premium
Wisconsin milk and then delicately
smoked over fruitwood to create subtle
smoky undertones with hints of roasted
nuts and coffee. The natural smoking
process adds nuanced layers of flavor,
creating a distinctive cheese. Moody
Blue has endless applications: crumbled
on burgers, soups and salads, stirred
into risotto, stuffed into dates, or
wrapped with prosciutto.

UPDATED PACKAGING ENHANCES DCI'S IL GIARDINO'S PROVOLONES

Wisconsin is known for making a wide
variety of Italian-inspired cheeses, and
DCI Cheese Company continues this tradition with il Giardino® Medium
Aged Provolone and Sharp Provolone, 2008 American Cheese Society
competition award-winning cheeses. Now, the il Giardino line has an updated,
contemporary look with new packaging that increases brand name visibility and
emphasizes the heritage and selection of natural ingredients. The cheeses
still have the superior flavors they’re
known for. The Medium Provolone has a slightly piquant taste, which intensifies, sharpens and becomes more
granular as it ages seven months to

2 MASTERS, 3 YEARS REFLECTED IN NASONVILLE BLUE MARBLE JACK

Nasonville Dairy introduces Blue Marble Jack Cheese, an original style that reflects the expertise of two Wisconsin Master Cheesemakers and the freshest milk from nearby dairy farms in northern Wisconsin. Master Cheesemakers Ken Heiman and Tom Torkelson have brought their combined 60-plus years of experience to create this semi-soft cheese that has a Monterey Jack body marbled with blue veins throughout the white curd. It has a distinct, but mild Blue Cheese flavor, setting it apart from traditional Blue Cheeses and making it a true Wisconsin Original. It took Heiman and Torkelson more than three years to master the blue vein marbling. Blue Marble Jack is a superb melting cheese and is available sliced for use on sandwiches, burgers, party trays and shredded for gourmet pizzas, appetizers, entrées and salads.

HOLLAND'S FAMILY CHEESE SPICES UP GOUDAS WITH PESTO, HONEY CLOVER

Marieke and Rolf Penterman came to Wisconsin in 2002 from the Netherlands to pursue their passion for dairy farming. Since then, Holland’s Family Cheese has transformed its premium rBGH-free raw milk from their farmstead creamery into authentic, handcrafted, Dutch style Goudas. Marieke recently added two new flavors to her award-winning repertoire. Marieke™ Honey Clover Gouda has added organic honey clover herbs for a subtle, honey-like
flavor. The cheese has clean, earthy, sweet grass notes that match well with light beers, Weisses,apples and walnuts. This new style won 3rd place
for “cheeses with flavorings added” at the 2009 American Cheese Society competition. Marieke™ Pesto Basil Gouda is flavored with pepper, basil, garlic and oregano, giving the cheese an Italian influence. Pesto Basil Gouda is superb when melted over chicken or pasta entrées or servedwith a spicy red
